Discover how acid can transform your drinks by adding brightness, balance, complexity, and longevity in ways that citrus alone cannot. In this flavor-packed seminar, Cush will explore the science and art of acidity in tropical cocktails, including creating custom acid solutions to make drinks pop, and finding alternative sources of acidity that add depth and character. Cush will also dive into using acid to preserve ingredients, the fundamentals of lacto-fermentation, vinegar production and applications in cocktails, and other techniques used by today's most innovative bartenders. This event is 21+ and includes two cocktail samples.

Scott "Dr. Cush" Cushman is host of the online cocktail community, Dr. Cush's Exotic Drinks, which meets live online three times a week to learn about the craft, history and technique behind some of the world's most and least known cocktails and spirits. Previously, Dr. Cush was head of beverage for a large Los Angeles based bar group for over 20 years.
